Popeyes UK has appointed Peter Gibson as Director of Acquisitions and Estates as part of the brand’s strategy to expand its presence in the UK. The company aims to open 30 new locations in the UK by the end of the year.
Gibson brings valuable experience to the role, having previously worked at Chicken Shop where he was responsible for property acquisitions. His background also includes positions as Property Director at Flat Iron and Property Acquisitions and Asset Manager at Nandos.
Tom Byng, Chief Development Officer at Popeyes, expressed confidence in Gibson’s ability to drive growth for the business and achieve the goal of having over 60 Popeyes UK restaurants by December. Since the first UK store opened in November 2021, the demand for Popeyes has been strong, and Gibson’s appointment is seen as a crucial step in meeting customer demand and introducing more people to the New Orleans-inspired flavors of Popeyes.
